What do you think of when you think of baked zucchini?
Here is an Italian recipe that you will love to make every week.
- 2 large sliced Zucchini
- 3chopped yellow or white Onion
- 6 eggs
- 1 Cup of grated Italiano Parmigiano-Reggiano Cheese
- 4 Tbls Italian Parsley
- 2-3 Tbls Fresh Garlic Powder (to your liking)
- 1 1/2 Cup of Bisquick
- 1/2 cup of Vegetable oil
- 1/2 tsp dried oregano
- 1-2 Tbls Mrs. Dash (salt-free)
- Ground pepper to taste
- 1/4 tsp salt
Preheat oven to 350 degrees
In a mixing bowl whisk the eggs until they are smooth then,
Add the vegetable oil, salt, Bisquick and parmigiano-Reggiano Cheese. Mix well.
In a separate bowl combine the zucchini, onions, garlic, parsley, oregano, Mrs. Dash, salt and pepper. Let sit 15 mins so the zucchini can absorb the spices.
Add the egg mixture to the zucchini mixture and combine.
Pour the mixture into a buttered 13 x 9 inch pan
Add more grated Italian cheese to the top and then,
Bake 25-30 mins or until light brown and be sure a toothpick comes out clean
Tips: Add more cheese to the top before baking if you love cheese.
Let it cool about 10 mins before consuming.
